Measurements of SFR stored at room temperature under aerobic conditions were not conducted due to the shortage of the material. Dashed line: 5% DM, continuous line 10% DM. Each data point is the average value of two to seven replicates (apart from the pH 5.9 SFR measurement which had no replicates), and error bars show 1 SD
